The question in my head daily round since they are approximately 5 pm is, "and we're going to dinner?" Really, you and I have a phobia about this question. Between burnout and lack of time to shop at times my fridge is a mess. As we say, "blacksmith's house, a wooden knife." Is that although I do not believe it so crazy sometimes between us (well be me) forgot to order fruit and vegetables a week for the house. Other Sometimes we make mistakes and some plant for the market over and finished for example more than 4 kilos of carrots in the fridge (if they notice an orange color in the skin of my family members please not ask). I think playing fast (as if it were so easy at that time and starving). Last night the first thing that occurred to me was to make a soup, easy fast verdudras I can use several at once and also with this cold I think the perfect dinner with a salad. Here is the recipe that is not no big deal but I found it easily and everybody liked. Then I give them the other things I did with the 4 kilos of carrots:)
CARROT SOUP WITH COCONUT MILK
1 cup coconut milk
1 kilo of carrots 1 potato
3 cloves garlic
2 tablespoons ghee or coconut oil (I always cook with ghee but you can use butter or any other oil of your choice)
1 teaspoon curry
1 teaspoon cinnamon
1 teaspoon cumin
1 teaspoon turmeric
(these were what I had in the pantry but can use the combination of species that prefer)
1 or 2 cups additional water to thin
Wash with brush tubers and chop into pieces more or less equal. Peel and chop the onion and garlic along with the leek. Place in a large pot of ghee, onion, garlic, leeks and left to wither, until the onion is transparent. It opens a little hole in the center of the vegetables and spices are added there. If the "cook" a little aroma and flavor intensifies. The stirring constantly to prevent burning and then mix with the vegetables, add the carrots and potatoes. Fry a little and then add the coconut milk, cover and let cook until the potatoes and carrots are tender . intriduce all in the blender instead of use a cloth cap to cover it, so thin the hot things not to "explode" with steam blender, adding more water if necessary. (I like that they are well blended and smooth Cream, but can also eat well with chopped vegetables without blending). Return the liquid to the stew and correct seasoning adding salt and pepper.
